Fast & Easy Gourmet Pasta
- 10 oz. cooked pasta
- 4Tblsp. Whole in the Wall Pesto (any kind)
- fresh tomatoes or grated parmesan
Pesto should be at room temperature-- defrost in microwave or let
sit on the counter for about 1 hour. Cook pasta as you would normally
(radiattori, spirals and rotini are excellent pastas to use with
pesto). When pasta is cooked and drained, toss pesto with steaming hot
pasta. Add fresh tomatoes or parmesan if desired.
*We use slightly more when using Spinach- Parmesan Pesto.
Pesto-Stuffed Flounder
- 10 oz. flounder fillet
- 3 oz. crab meat (fresh or canned)
- 1/4 stick butter (2Tblsp.)
- spices: garlic powder, pepper, dill,
- parsley
- Whole in the Wall Pesto
- freshly grated parmesan cheese
Place two pats of butter in a broil dish (or any other deep,
oven-safe dish). Sprinkle a dash of pepper and a dash of garlic powder
over the butter. Divide the flounder into two 5 oz. fillets and
lightly pound each one. Place one fillet in the dish on top of the
butter. Lightly spread pesto over the entire fillet, then crumble crab
meat over the pesto. Place the other 5 oz. fillet over this, then top
it with two more pats of butter and a dash each of pepper and garlic
powder. Put a tiny dollop of pesto on top and place in broiler. Baste
occasionally until fish breaks apart when pressed. Sprinkle with dill
and broil for one or two more minutes. Remove from broiler and
sprinkle with parmesan.
Pesto Shrimp Scampi
- 10 shelled, deveined shrimp (thawed or
- fresh)
- 1 Tblsp. butter
- spices: garlic powder, pepper, dill,
- parsley
- 1 lemon
- 1 Tblsp. olive oil
- a little white wine
- Whole in the Wall Pesto
- freshly grated parmesan cheese
Place 1/2 Tblsp. of butter and 1/2 Tblsp olive oil in the bottom of
a broiling dish (or other deep, oven-safe dish). Sprinkle a dash each
of pepper and garlic powder over the butter and oil. Arrange the
shrimp in the dish on top of the butter. Put 1/2 Tblsp. butter and 1/2
Tblsp. oil on top of the shrimp. Sprinkle with one more dash of pepper
and garlic powder. Drizzle 1-2 Tblsp. of wine and the juice of 1/4
lemon on top. Place in the broiler. Baste occasionally until shrimp
are about two-thirds done (they usually turn pink and curl up a bit).
Now place 2 Tblsp. of pesto on top and continue broiling for 11/2 to 2
minutes. Remove from broiler and sprinkle with parmesan.
Luncheon Pizza
Great for kids!

- 1 bagel or English muffin
- 2 Tblsp. Whole in the Wall Pesto
- 2 slices mozzarella
- freshly grated parmesan cheese
Cut a bagel or English muffin in half and spread 1 Tblsp. of Whole
in the Wall Pesto on each half, then top with mozzarella. Add your
favorite pizza toppings and bake in a 450° oven for about 7 minutes.
Sprinkle with parmesan.
Pesto Pizza
Roll out a 16-inch pizza crust (of course you can cheat and buy one
already made). Add 3/4 cup of your favorite Whole in the Wall Pesto.
Top with 16 oz. shredded mozzarella and your favorite pizza toppings.
Bake in a 450°oven for 12-15 minutes. Sprinkle with freshly grated
parmesan, slice and serve.
Pesto Grilled Fish or Chicken
Great with jasmine rice and a side of steamed vegetables.
- 2 Tblsp. Whole in the Wall Pesto
- 6 oz. chicken or fish
Grill your favorite cut of fish or chicken as you normally would.
When almost completely cooked, lightly coat with pesto to taste and
grill an additional 1 to 2 minutes.
Pesto Spread
Makes great hors dÕoeuvres served on crackers or freshly sliced
baguette.
Mix 8 oz. cream cheese (regular or non-fat) with 1/2 cup of your
favorite Whole in the Wall Pesto (our personal favorite is Cajun
Pesto).
Pesto Dip
Another great hors dÕoeuvre with chips or raw veggies.
Mix 1 pint of sour cream (or regular or non- fat plain yogurt) with
11/4 cup of, you guessed it, Whole in the Wall Pesto.
Pesto Garlic Bread
- 1 large loaf of Italian bread
- 3-4 cloves garlic, minced
- Whole in the Wall Pesto
- garlic powder and pepper
Preheat oven to 375¡. Split the loaf of bread lengthwise and spread
each half generously with pesto, minced garlic and spices. Bake for
about 5-10 minutes or until bread is lightly toasted. Sprinkle with
freshly grated parmesan and serve.
In your favorite recipes...
Fill an omelets with 2 Tblsp. Whole in the Wall Pesto, your
favorite type of cheese and some freshly sliced tomatoes.
In your favorite lasagna recipe, use Whole in the Wall Pesto
instead of tomato sauce, or mix pesto to taste with a cream sauce.
For a pesto vinaigrette, mix Whole in the Wall Pesto with
your favorite type of vinegar to taste. Add a little extra olive oil,
if desired. Great on vegetables or cold pasta salad.
To make a dipping sauce for steamed vegetables, mix yogurt
(not-fat or regular) and pesto to taste. Heat carefully until just
warm.

- Use on a sandwich instead of mayonnaise or mustard
- Toss with pierogies
- Use to top baked potatoes
- Mix with stuffing for an extra special holiday treat
